Saikō is the Japanese word for innovative, the driving force in all we do. Of utmost importance is the respect for the ingredients, pure palates and the wellbeing of our guests.
Our mission is, by being perceptive; freely creating a culinary experience with our sushi and our japas – smaller dishes inspired by Japan with seasonal ingredients.
We warmly guard the fish stocks and appreciate what the local waters, forests and orchards can provide.
Matching tableware is not our way. With somewhat picky hands we adore visiting the flea markets – an environmentally, recycled, utterly beautiful sets of dishes if you will.
